Die Hot Sauce Scoville Skala listet zahlreiche scharfe Saucen auf, die nach ihrem Schärfegrad und ihrem Capsaicingehalt in Scoville Heat Units (SHU) sortiert sind. Als Hot Sauce werden verschiedene Arten von scharfen Saucen mit Chilis bezeichnet. Je nach Hersteller und Saucenart werden verschiedene Zutaten wie Obst und Gemüse mit scharfen Chilis, Gewürzen und meist Essig vermengt. Hot Sauce kann fermentiert, gekocht oder roh hergestellt werden.

Hot Sauce Arten

Je nach Art der Produktion und den verwendeten Chilis kann man Hot Sauce in verschiedene Typen und Schärfegrade unterteilen. And so gibt es eher dickflüssige Saucen mit viel Chili Anteil wie die Sriracha Sauce. Die Sriracha Sauce ist nach der Stadt Si Racha in Thailand benannt und besteht hauptsächlich aus pürierten Chilis, Knoblauch, Zucker und relativ wenig Essig. Sie gehört weltweit zu den bekannesten Asiasaucen, die in der Küche verwendet werden. Es gibt aber auch dünnere Saucen, bei denen mehr Essig verwendet wird wie zum Beispiel die klassische Louisiana Hot Sauce. Dice weltbekannte Tabasco Sauce aus den U.s. ist ein typischer Vertreter des Louisiana Styles.

In der Karibik gibt es sehr fruchtige Chili Saucen, welche meist aus frischem Obst und Chilis der Art Capsicum chinense hergestellt werden. Capsicum chinense Chilis besitzen ein sehr aromatisches Aroma bei einer recht hohen bis extrem hohen Schärfe. Sie eignen sich daher auch für dice Herstellung von extrem scharfen Chili Saucen und Extrakten. Then ist es nicht verwunderlich, dass die Scoville Skala von Blair's 16 Million Reserve angeführt wird. Die 16 im Namen steht für 16 Million Scoville Oestrus Units. Es handelt sich dabei allerdings nicht um eine Sauce im eigentlichen Sinne, sondern um pure Capsaicin Kristalle.
